Description

Light, fluffy, and bursting with real strawberry flavor, these homemade marshmallows are perfect for hot chocolate, s’mores, or a sweet snack. Made with freeze-dried strawberries for an intense berry taste, they are easy to make and far better than store-bought!


Ingredients

  • ¼ cup cornstarch
  • ¼ cup powdered sugar
  • ¼ cup powdered freeze-dried strawberries
  • 3 packets (7g each) unflavored gelatin
  • 1 cup ice-cold water (divided)
  • 1½ cups granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¾ cup powdered freeze-dried strawberries

Instructions

  • Blend freeze-dried strawberries into a fine powder and set aside.
  • Mix powdered sugar, cornstarch, and strawberry powder for the coating.
  • Bloom gelatin in ½ cup cold water in a stand mixer bowl.
  • Heat remaining water, sugar, corn syrup, and salt until it reaches 240°F.
  • Slowly drizzle hot syrup into bloomed gelatin while mixing.
  • Beat on high for 10–15 minutes until thick and fluffy.
  • Add vanilla and strawberry powder, mixing until combined.
  • Pour into a greased pan, dust with coating, and let set for 6 hours.
  • Cut into squares and toss in the remaining coating to prevent sticking.

Notes

  • Store in an airtight container at room temperature for up to 2 weeks.
  • Use a candy thermometer for accuracy.
  • Coat the knife with powdered mix for clean cuts.
