Light, fluffy, and bursting with real strawberry flavor, these homemade marshmallows are perfect for hot chocolate, s’mores, or a sweet snack. Made with freeze-dried strawberries for an intense berry taste, they are easy to make and far better than store-bought!

- ¼ cup cornstarch
- ¼ cup powdered sugar
- ¼ cup powdered freeze-dried strawberries
- 3 packets (7g each) unflavored gelatin
- 1 cup ice-cold water (divided)
- 1½ cups granulated sugar
- 1 cup light corn syrup
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ¾ cup powdered freeze-dried strawberries
Instructions
- Blend freeze-dried strawberries into a fine powder and set aside.
- Mix powdered sugar, cornstarch, and strawberry powder for the coating.
- Bloom gelatin in ½ cup cold water in a stand mixer bowl.
- Heat remaining water, sugar, corn syrup, and salt until it reaches 240°F.
- Slowly drizzle hot syrup into bloomed gelatin while mixing.
- Beat on high for 10–15 minutes until thick and fluffy.
- Add vanilla and strawberry powder, mixing until combined.
- Pour into a greased pan, dust with coating, and let set for 6 hours.
- Cut into squares and toss in the remaining coating to prevent sticking.
Notes
- Store in an airtight container at room temperature for up to 2 weeks.
- Use a candy thermometer for accuracy.
- Coat the knife with powdered mix for clean cuts.
