For the Oatmeal Cookies:
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp cinnamon
- ½ tsp salt
- ¾ cup unsalted butter (softened)
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 ½ cups quick oats
For the Cream Filling:
- ¾ cup unsalted butter (softened)
- 2 ½ cups powdered sugar
- 2 tbsp heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, and salt.
- In another bowl, beat butter and brown sugar until fluffy. Add eggs and vanilla.
- Gradually mix in dry ingredients, then fold in the oats.
- Scoop dough onto baking sheets and bake for 8-10 minutes. Let cool.
- For the filling, beat butter, powdered sugar, heavy cream, and vanilla until smooth.
- Spread filling on the flat side of one cookie, then top with another.

Notes
- Chill dough for 30 minutes before baking for thicker cookies.
