For the Pie Crust:

- 1 teaspoon salt
- 1 tablespoon sugar
- 6–8 tablespoons ice water

- 6–7 cups apples, peeled & sliced (Granny Smith or Honeycrisp)
- ¾ cup granulated sugar
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons butter, cut into small cubes

For the Egg Wash:
- 1 egg
- 1 tablespoon milk
Instructions
- Prepare the Crust: Mix flour, salt, and sugar in a bowl. Cut in the butter until the mixture resembles coarse crumbs. Add ice water gradually until dough forms. Divide into two discs, wrap, and refrigerate for 30 minutes.
- Prepare the Filling: Toss apple slices with sugar, cinnamon, salt, lemon juice, and cornstarch. Let sit for 15 minutes.
- Roll Out Dough: Roll out one dough disc and fit it into a 9-inch pie pan.
- Assemble the Pie: Pour the apple filling into the crust, dot with butter, and cover with the second dough disc. Seal and crimp the edges, then cut small slits in the top.
- Bake: Brush with egg wash and bake at 375°F (190°C) for 45-50 minutes until golden brown and bubbly.
- Cool and Serve: Let cool for at least 2 hours before slicing. Serve with ice cream or whipped cream.
