  • 1 lb lean ground beef
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 can (8 oz) sliced mushrooms, drained
  • ½ tsp dried oregano
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 1 cup instant rice
  • 1¼ cups water
  • 1 can (10.5 oz) condensed cream of celery soup
  • ⅓ cup sour cream
  • Salt & pepper, to taste
  • ½ cup frozen mixed vegetables
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Cook ground beef, onion, and garlic in a large skillet over medium heat until browned. Drain excess fat.
  • In a large bowl, mix the beef mixture with mushrooms, oregano, spinach, rice, water, soup, sour cream, frozen vegetables, salt, and pepper.
  • Spread mixture evenly in the prepared baking dish. Cover with foil.
  • Bake for 40-45 minutes, until rice is tender and flavors are well blended.
  • Remove foil, sprinkle shredded cheese on top, and broil for 3-5 minutes until golden and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

  • Substitute ground beef with ground turkey, chicken, or sausage.
  • Add spice with red pepper flakes or chili powder.
