- 1 lb lean ground beef
- 1 onion, diced
- 1 clove garlic, minced
- 1 can (8 oz) sliced mushrooms, drained
- ½ tsp dried oregano
- 10 oz frozen chopped spinach, thawed and squeezed dry
- 1 cup instant rice
- 1¼ cups water
- 1 can (10.5 oz) condensed cream of celery soup
- ⅓ cup sour cream
- Salt & pepper, to taste
- ½ cup frozen mixed vegetables
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook ground beef, onion, and garlic in a large skillet over medium heat until browned. Drain excess fat.
- In a large bowl, mix the beef mixture with mushrooms, oregano, spinach, rice, water, soup, sour cream, frozen vegetables, salt, and pepper.
- Spread mixture evenly in the prepared baking dish. Cover with foil.
- Bake for 40-45 minutes, until rice is tender and flavors are well blended.
- Remove foil, sprinkle shredded cheese on top, and broil for 3-5 minutes until golden and bubbly.
- Let it cool for a few minutes before serving. Enjoy!
