Description

A healthy and delicious one-pan meal made with lean ground turkey, sweet potatoes, and flavorful spices. Perfect for a quick dinner or meal prep!


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled & diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup water
  • Juice of ½ lime
  • Fresh parsley or cilantro for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add onion and sauté for 2 minutes.
  • Add ground turkey, season with salt, pepper, cumin, and smoked paprika. Cook for 5-6 minutes until browned.
  • Stir in garlic and bell pepper. Cook for another 3-4 minutes.
  • Add diced sweet potatoes and pour in ½ cup water. Cover and simmer for 10-12 minutes until tender.
  • Remove from heat, squeeze in fresh lime juice, garnish with parsley or cilantro, and serve warm.

Notes

  • Use chicken broth instead of water for extra flavor.
  • Add red pepper flakes for some heat.
  • Store leftovers in an airtight container for up to 4 days.
