A healthy and delicious one-pan meal made with lean ground turkey, sweet potatoes, and flavorful spices. Perfect for a quick dinner or meal prep!

- 1 lb ground turkey
- 2 medium sweet potatoes, peeled & diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tbsp olive oil
- ½ tsp smoked paprika
- 1 tsp cumin
- ½ tsp salt
- ½ tsp black pepper
- ½ cup water
- Juice of ½ lime
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and sauté for 2 minutes.
- Add ground turkey, season with salt, pepper, cumin, and smoked paprika. Cook for 5-6 minutes until browned.
- Stir in garlic and bell pepper. Cook for another 3-4 minutes.
- Add diced sweet potatoes and pour in ½ cup water. Cover and simmer for 10-12 minutes until tender.
- Remove from heat, squeeze in fresh lime juice, garnish with parsley or cilantro, and serve warm.
Notes
- Use chicken broth instead of water for extra flavor.
- Add red pepper flakes for some heat.
- Store leftovers in an airtight container for up to 4 days.
