Ingredients

1 tablespoon olive oil

3 garlic cloves, minced

1 pound ground turkey

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and black pepper to taste

1 medium yellow onion, diced

1 yellow bell pepper, diced

2 medium sweet potatoes, peeled and diced

¼ cup water

1 cup shredded mozzarella cheese

Fresh cilantro, chopped (for garnish)
Instructions

Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.

Add ground turkey. Cook until browned, breaking it apart with a spatula.

Stir in cumin, chili powder, salt, and pepper.

Add diced onion and bell pepper. Sauté for 4–5 minutes until softened.

Add sweet potatoes and water. Stir to combine, cover, and cook 6–8 minutes until tender.

Uncover, stir, and adjust seasoning.

Sprinkle mozzarella on top. Cover until melted or broil for a golden finish.

Garnish with chopped cilantro. Serve hot.
