Ingredients
For the Chicken Marinade:

1 lb chicken breasts or thighs

2 tbsp chipotle peppers in adobo

1 tsp garlic powder

½ tsp smoked paprika

Salt & pepper to taste
For the Chipotle Ranch Sauce:

½ cup ranch dressing

1 tbsp pureed chipotle peppers

1 tsp lemon juice
For the Burrito Assembly:

4 large flour tortillas
-
1 cup cooked rice (white, brown, or cilantro-lime)

½ cup black or pinto beans
-
½ cup shredded cheddar or Monterey Jack cheese

½ cup shredded lettuce
-
1 diced tomato
-
Optional: corn, cilantro, guacamole, sour cream, salsa
Instructions

Mix marinade ingredients and coat chicken. Marinate in the fridge for 30 mins to 2 hours.

Grill chicken 5–7 mins per side until internal temp reaches 165°F. Rest, then slice.

Mix ranch, chipotle, and lemon juice for sauce. Adjust spice to taste.

Warm tortillas. Layer with sauce, rice, beans, chicken, cheese, lettuce, and tomato.

Optional: Fold tightly and grill burritos until golden and crisp on both sides.
