Description

This grilled chicken avocado sandwich is packed with juicy chicken breast, creamy avocado, melty cheese, and crisp grilled bread. It’s quick, easy, and full of bold, satisfying flavor.


Ingredients

  • 2 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 Tbsp olive oil

  • 1 avocado, sliced

  • 4 slices of cheese (Swiss, cheddar, or provolone)

  • 4 slices of bread (sourdough, ciabatta, or your choice)

  • 2 Tbsp mayonnaise

  • 1 Tbsp Dijon mustard

  • 1 small red onion, thinly sliced

  • 1 tomato, sliced

  • Butter or olive oil, for grilling


Instructions

  • Season chicken with salt and pepper. Cook in a skillet over medium-high heat for 6–7 minutes per side until done. Let rest and slice.

  • Slice avocado, tomato, and red onion. Spread mayo and Dijon on each bread slice.

  • On two slices, layer chicken, avocado, cheese, onion, and tomato. Top with remaining bread, spread side down.

  • Grill in a skillet with butter/oil for 3–4 minutes per side until golden and cheese is melted.

  • Let cool slightly, then slice and serve.

Notes

  • Use freshly sliced cheese for better melt.

  • Swap mayo for Greek yogurt for a lighter version.

  • Use gluten-free bread if needed.
