- 4 medium potatoes (Russet or Yukon Gold)
- 1 small onion, grated
- 2 eggs, beaten
- 2–3 tbsp all-purpose flour (or potato starch for gluten-free)
- ½ tsp salt
- ¼ tsp black pepper
- Oil for frying (vegetable or canola)
Instructions
- Peel and grate the potatoes and onion.
- Squeeze out excess moisture using a clean towel.
- In a bowl, mix grated potatoes, onion, eggs, flour, salt, and pepper.
- Heat oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into the pan, flattening them slightly.
- Fry for 3-4 minutes per side until golden and crispy.
- Drain on paper towels and serve warm with apple sauce or sour cream.
Notes
- For extra crispiness, remove as much liquid as possible from the potatoes.
- Serve immediately for the best texture.
