Description

Enjoy crispy and golden German potato pancakes, also known as Kartoffelpuffer. This simple and delicious recipe is perfect as a snack, side dish, or meal, traditionally served with apple sauce or sour cream.

  • 4 medium potatoes (Russet or Yukon Gold)
  • 1 small onion, grated
  • 2 eggs, beaten
  • 23 tbsp all-purpose flour (or potato starch for gluten-free)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Oil for frying (vegetable or canola)

Instructions

  • Peel and grate the potatoes and onion.
  • Squeeze out excess moisture using a clean towel.
  • In a bowl, mix grated potatoes, onion, eggs, flour, salt, and pepper.
  • Heat oil in a skillet over medium-high heat.
  • Drop spoonfuls of batter into the pan, flattening them slightly.
  • Fry for 3-4 minutes per side until golden and crispy.
  • Drain on paper towels and serve warm with apple sauce or sour cream.

  • For extra crispiness, remove as much liquid as possible from the potatoes.
