Description
A quick and savory one-skillet meal made with juicy sirloin steak cubes and crispy Yukon gold potatoes, infused with garlic, thyme, and oregano.
Ingredients

¼ cup ghee or butter (divided)

1 tbsp olive oil

1 lb Yukon gold potatoes (cut into ½” cubes)

3 garlic cloves (minced)

1 tsp dried thyme

½ tsp dried oregano
-
½ tsp sea salt + more to taste

¼ tsp ground black pepper + more to taste

1¼ lb sirloin steak (cut into ½” cubes)

Fresh parsley for garnish
Instructions

Heat 2 tbsp ghee + olive oil in a cast iron skillet over medium heat.

Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 8–10 minutes until crispy and fork-tender. Remove and set aside.

Raise heat to medium-high. Add 2 tbsp more ghee, then steak cubes. Sear for 2 minutes undisturbed, then stir and cook another 1–2 minutes.

Return potatoes to skillet. Toss everything together.

Garnish with parsley and serve hot.
