Description

A quick and savory one-skillet meal made with juicy sirloin steak cubes and crispy Yukon gold potatoes, infused with garlic, thyme, and oregano.


Ingredients

  • ¼ cup ghee or butter (divided)

  • 1 tbsp olive oil

  • 1 lb Yukon gold potatoes (cut into ½” cubes)

  • 3 garlic cloves (minced)

  • 1 tsp dried thyme

  • ½ tsp dried oregano

  • ½ tsp sea salt + more to taste

  • ¼ tsp ground black pepper + more to taste

  • lb sirloin steak (cut into ½” cubes)

  • Fresh parsley for garnish


Instructions

  • Heat 2 tbsp ghee + olive oil in a cast iron skillet over medium heat.

  • Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 8–10 minutes until crispy and fork-tender. Remove and set aside.

  • Raise heat to medium-high. Add 2 tbsp more ghee, then steak cubes. Sear for 2 minutes undisturbed, then stir and cook another 1–2 minutes.

  • Return potatoes to skillet. Toss everything together.

  • Garnish with parsley and serve hot.

Notes

  • Use a cast iron skillet for the best sear.

  • Let steak rest at room temp before cooking for even doneness.

  • Avoid overcrowding the pan for crispier results.
