- 2 boneless, skinless chicken breasts (cubed)
- 1 tbsp olive oil
- Salt & pepper to taste
- 3 cloves garlic (minced)
- 1 lb potato gnocchi (store-bought or homemade)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 cups fresh spinach (optional)
- Juice of ½ lemon
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook for 5-6 minutes until golden brown. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant. Add gnocchi and cook for 2-3 minutes.
- Pour in chicken broth and heavy cream, then stir in Parmesan cheese and Italian seasoning. Let simmer for 5 minutes until thickened.
- Return chicken to the skillet, add spinach, and stir until wilted. Squeeze in lemon juice.
- Serve hot, garnished with extra Parmesan.
