Description

Ingredients

  • 2 boneless, skinless chicken breasts (cubed)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 3 cloves garlic (minced)
  • 1 lb potato gnocchi (store-bought or homemade)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach (optional)
  • Juice of ½ lemon

Instructions

  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook for 5-6 minutes until golden brown. Remove and set aside.
  • In the same skillet, sauté garlic for 30 seconds until fragrant. Add gnocchi and cook for 2-3 minutes.
  • Pour in chicken broth and heavy cream, then stir in Parmesan cheese and Italian seasoning. Let simmer for 5 minutes until thickened.
  • Return chicken to the skillet, add spinach, and stir until wilted. Squeeze in lemon juice.
  • Serve hot, garnished with extra Parmesan.

  • Swap spinach for sun-dried tomatoes for a Mediterranean twist.
