This Garlic Butter Chicken & Potatoes Skillet is a flavorful and easy one-pan meal. Juicy, seasoned chicken is cooked to perfection alongside crispy baby potatoes in a rich garlic butter sauce. It’s quick, satisfying, and perfect for busy weeknights!

- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 lb baby potatoes (halved or quartered)
- 4 cloves garlic (minced)
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- Salt & pepper to taste
- Juice of ½ lemon
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the potatoes, season with salt, pepper, and Italian seasoning, and cook for 10-12 minutes until crispy. Remove and set aside.
- In the same skillet, melt 1 tbsp butter, add the chicken, and season with smoked paprika, salt, and pepper. Sear for 5-6 minutes until golden brown and fully cooked. Remove and set aside.
- Melt the remaining 2 tbsp butter and sauté the garlic for 30 seconds until fragrant.
- Return the chicken and potatoes to the skillet and toss in the garlic butter sauce.
- Squeeze lemon juice over the dish and garnish with fresh parsley. Serve warm.

- For extra crispiness, finish the dish under the broiler for 2-3 minutes.
