Description

This Garlic Butter Chicken & Potatoes Skillet is a flavorful and easy one-pan meal. Juicy, seasoned chicken is cooked to perfection alongside crispy baby potatoes in a rich garlic butter sauce. It’s quick, satisfying, and perfect for busy weeknights!


Ingredients

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 lb baby potatoes (halved or quartered)
  • 4 cloves garlic (minced)
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • Juice of ½ lemon
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the potatoes, season with salt, pepper, and Italian seasoning, and cook for 10-12 minutes until crispy. Remove and set aside.
  2. In the same skillet, melt 1 tbsp butter, add the chicken, and season with smoked paprika, salt, and pepper. Sear for 5-6 minutes until golden brown and fully cooked. Remove and set aside.
  3. Melt the remaining 2 tbsp butter and sauté the garlic for 30 seconds until fragrant.
  4. Return the chicken and potatoes to the skillet and toss in the garlic butter sauce.
  5. Squeeze lemon juice over the dish and garnish with fresh parsley. Serve warm.

  • For extra crispiness, finish the dish under the broiler for 2-3 minutes.
  • Add vegetables like asparagus, green beans, or bell peppers for a balanced meal.
