    • 2 boneless, skinless chicken breasts
    • 2 tbsp olive oil
    • ½ tsp garlic powder
    • Salt & black pepper to taste
  • For the Garlic Butter Sauce & Rice:
    • 3 tbsp unsalted butter
    • 3 cloves garlic, minced
    • 1 ½ cups chicken broth
    • 1 cup long-grain white rice
    • ½ cup grated Parmesan cheese
    • Optional: Red pepper flakes, parsley

Instructions

  • Season the chicken with garlic powder, salt, and pepper.
  • Sear in olive oil over medium heat for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet.
  • Make the garlic butter sauce by melting butter, adding minced garlic, and sautéing until fragrant. Pour in chicken broth and let it simmer.
  • Stir in the rice and cook until tender, about 15-20 minutes.
  • Mix in Parmesan cheese, then return the chicken to the skillet. Cover and let sit for 5 minutes. Garnish and serve warm.
