Ingredients

  • For the Sugar Cookie Crust: 1 cup butter (cubed), 1 cup granulated sugar, 1 egg, ½ tsp vanilla extract, ½ tsp almond extract, 2 tsp baking powder, 3 cups all-purpose flour
  • For the Creamy Filling: 1 box (3.9 oz) instant vanilla pudding, 1 ½ cups cold milk, ¾ tsp almond extract, 1 cup heavy whipping cream
  • Fresh Fruit Toppings: Strawberries, blueberries, raspberries, blackberries, kiwi, mango, peaches, bananas (optional), pineapple, grapes, mandarin oranges

Instructions

  • Preheat & Prepare Crust: Preheat oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
  • Make the Dough: In a bowl, cream butter and sugar until fluffy. Add egg, vanilla, and almond extract. Mix in baking powder and flour until dough forms.
  • Bake the Crust: Press the dough evenly into the baking sheet. Bake for 12 minutes until edges are lightly golden. Let it cool completely.
  • Prepare the Filling: In a bowl, whisk milk, vanilla pudding mix, and almond extract until thickened. Separately, whip heavy cream until stiff peaks form, then fold it into the pudding mixture.
  • Assemble the Pizza: Spread the creamy filling over the cooled crust. Arrange the fresh fruit in a decorative pattern.
  • Chill & Serve: Refrigerate for 1-2 hours before serving for the best texture and flavor.

Notes

  • Use a rolling pin to ensure an even crust thickness.
  • Avoid adding fruits with high moisture content like watermelon to prevent a soggy crust.
  • For extra shine, lightly brush fruit with melted apricot jelly.
