Ingredients

2 lbs fresh peaches (rinsed & diced)

1 lb ripe tomatoes (diced)

1 small bunch cilantro (finely chopped)

⅓ cup red onion (minced)

1 lime (juice only)

1 jalapeño (seeded & minced — leave seeds for more heat)

½ tsp salt

Ground black pepper (to taste)
Instructions

Dice the peaches and add to a large bowl.

Dice tomatoes, red onion, jalapeño, and chop cilantro.

Add everything to the bowl with the peaches.

Pour lime juice, sprinkle salt and pepper. Mix gently.
