Ingredients

  • 2 lbs fresh peaches (rinsed & diced)

  • 1 lb ripe tomatoes (diced)

  • 1 small bunch cilantro (finely chopped)

  • ⅓ cup red onion (minced)

  • 1 lime (juice only)

  • 1 jalapeño (seeded & minced — leave seeds for more heat)

  • ½ tsp salt

  • Ground black pepper (to taste)


Instructions

  • Dice the peaches and add to a large bowl.

  • Dice tomatoes, red onion, jalapeño, and chop cilantro.

  • Add everything to the bowl with the peaches.

  • Pour lime juice, sprinkle salt and pepper. Mix gently.

  • Chill for 15 minutes (optional), then serve.
