This Egg Roll Soup brings all the flavors of a classic egg roll into a cozy, comforting bowl! Made with ground turkey, cabbage, and a flavorful broth, this soup is easy, healthy, and perfect for meal prep.


Ingredients

  • 1 lb ground turkey (or chicken)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded carrots
  • 4 cups coleslaw mix (or shredded cabbage)
  • ½ cup sliced mushrooms (optional)
  • 1 tablespoon soy sauce (low sodium)
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth (or vegetable broth)
  • Salt & pepper to taste
  • Green onions & sesame seeds for garnish

Instructions

  • Cook ground turkey in a large pot over medium heat until browned. Drain excess grease.
  • Add diced onion and minced garlic. Sauté until fragrant.
  • Stir in shredded carrots and mushrooms. Cook for 2-3 minutes.
  • Add cabbage, soy sauce, sesame oil, ginger, and red pepper flakes. Mix well.
  • Pour in chicken broth, bring to a simmer, and cook for 10-15 minutes.
  • Taste and adjust seasoning. Serve with green onions and sesame seeds.

Notes

  • Swap turkey for tofu for a vegetarian version.
  • Add ramen or rice noodles for a heartier meal.
