This Egg Roll Soup brings all the flavors of a classic egg roll into a cozy, comforting bowl! Made with ground turkey, cabbage, and a flavorful broth, this soup is easy, healthy, and perfect for meal prep.

- 1 lb ground turkey (or chicken)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup shredded carrots
- 4 cups coleslaw mix (or shredded cabbage)
- ½ cup sliced mushrooms (optional)
- 1 tablespoon soy sauce (low sodium)
- 1 teaspoon sesame oil
- 1 teaspoon ground ginger
- ½ teaspoon red pepper flakes (optional)
- 4 cups chicken broth (or vegetable broth)
- Salt & pepper to taste
- Green onions & sesame seeds for garnish
Instructions
- Cook ground turkey in a large pot over medium heat until browned. Drain excess grease.
- Add diced onion and minced garlic. Sauté until fragrant.
- Stir in shredded carrots and mushrooms. Cook for 2-3 minutes.
- Add cabbage, soy sauce, sesame oil, ginger, and red pepper flakes. Mix well.
- Pour in chicken broth, bring to a simmer, and cook for 10-15 minutes.
- Taste and adjust seasoning. Serve with green onions and sesame seeds.
Notes
- Swap turkey for tofu for a vegetarian version.
- Add ramen or rice noodles for a heartier meal.
- Store leftovers in the fridge for up to 4 days.
