Ingredients

  • 1 lb ground beef (or ground chicken/turkey)

  • 1 small onion, diced

  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

  • Salt and pepper, to taste

  • 3 cups prepared mashed potatoes (homemade or store-bought)

  • 1 cup shredded cheddar cheese

  • Fresh parsley, for garnish (optional)


Instructions

  • Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.

  • In a skillet, cook ground beef and onion over medium heat until browned. Drain excess grease and season with salt and pepper.

  • Add mixed vegetables and cream of mushroom soup. Stir and simmer for 3-5 minutes.

  • Spread meat mixture evenly in the baking dish.

  • Spread mashed potatoes over the meat mixture, then sprinkle with shredded cheese.

  • Bake for 20 minutes or until cheese is melted and bubbly.

  • Broil for 1-2 minutes for a golden, crispy top (optional).

  • Let rest for 5 minutes before serving. Garnish with parsley if desired.
