  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
For the Lemon Filling:
  • 4 large eggs
  • 1 ¾ cups granulated sugar
  • ⅓ cup all-purpose flour
  • ½ cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
For Garnish:
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  • Prepare the crust: Mix butter, flour, powdered sugar, and salt until a soft dough forms. Press it into the dish and bake for 18-20 minutes until lightly golden.
  • Make the filling: Whisk eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour over the warm crust.
  • Bake again for 22-25 minutes until set. Let cool completely.
  • Dust with powdered sugar, slice into bars, and enjoy!
