  • 2 cups shredded cooked chicken (rotisserie works great)
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 10 oz cheese tortellini (fresh or frozen)
  • ½ cup heavy cream
  • ½ cup shredded Parmesan cheese (optional)
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Pour in the chicken broth, add Italian seasoning, salt, and pepper. Bring to a gentle boil.
  • Add the tortellini and cook according to package instructions (5 minutes for fresh, 8 minutes for frozen).
  • Stir in shredded chicken and heavy cream. Simmer for 2-3 minutes until heated through.
  • Remove from heat, stir in Parmesan cheese (if using), and garnish with fresh parsley. Serve warm.
