- 10 oz cheese tortellini (fresh or frozen)
- ½ cup heavy cream
- ½ cup shredded Parmesan cheese (optional)
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth, add Italian seasoning, salt, and pepper. Bring to a gentle boil.
- Add the tortellini and cook according to package instructions (5 minutes for fresh, 8 minutes for frozen).
- Stir in shredded chicken and heavy cream. Simmer for 2-3 minutes until heated through.
- Remove from heat, stir in Parmesan cheese (if using), and garnish with fresh parsley. Serve warm.
