Ingredients

  • 5 cups mixed greens (spring mix, arugula, or spinach)
  • 1 cup fresh strawberries, sliced
  • ¼ cup goat cheese, crumbled
  • ¼ cup sliced almonds
  • 2 tbsp red onion, thinly sliced

For the Lemon-Honey Vinaigrette:

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt & black pepper to taste

Instructions

  • Make the dressing: In a bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  • Prepare the ingredients: Wash and dry the greens, slice the strawberries, and thinly slice the red onion.
  • Assemble the salad: In a large bowl, toss together the greens, strawberries, goat cheese, almonds, and red onion.
  • Dress and serve: Drizzle the vinaigrette over the salad and toss gently. Garnish with extra goat cheese and almonds. Serve immediately.

Notes

  • For extra crunch, toast the almonds before adding them to the salad.
