- 5 cups mixed greens (spring mix, arugula, or spinach)
- 1 cup fresh strawberries, sliced
- ¼ cup goat cheese, crumbled
- ¼ cup sliced almonds
- 2 tbsp red onion, thinly sliced
For the Lemon-Honey Vinaigrette:
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt & black pepper to taste
Instructions
- Make the dressing: In a bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
- Prepare the ingredients: Wash and dry the greens, slice the strawberries, and thinly slice the red onion.
- Assemble the salad: In a large bowl, toss together the greens, strawberries, goat cheese, almonds, and red onion.
- Dress and serve: Drizzle the vinaigrette over the salad and toss gently. Garnish with extra goat cheese and almonds. Serve immediately.
Notes
- For extra crunch, toast the almonds before adding them to the salad.
- Swap goat cheese for feta or blue cheese if preferred.
