Ingredients

  • 2 English cucumbers, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley or cilantro, chopped
  • ¼ cup feta cheese, crumbled (optional)

Dressing:

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano

Instructions

  • Slice the cucumbers, bell peppers, and onion thinly. Chop the parsley or cilantro.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, garlic, salt, pepper, and oregano.
  • In a large salad bowl, combine the sliced vegetables and fresh herbs.
  • Drizzle the dressing over the salad and toss gently to coat everything.
  • Sprinkle feta cheese on top if using.
  • Serve immediately or chill for 15 minutes for enhanced flavors.
