- 1 yellow bell pepper, thinly sliced

- ¼ cup fresh parsley or cilantro, chopped
- ¼ cup feta cheese, crumbled (optional)
Dressing:
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried oregano
Instructions
- Slice the cucumbers, bell peppers, and onion thinly. Chop the parsley or cilantro.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, garlic, salt, pepper, and oregano.
- In a large salad bowl, combine the sliced vegetables and fresh herbs.
- Drizzle the dressing over the salad and toss gently to coat everything.
- Sprinkle feta cheese on top if using.
- Serve immediately or chill for 15 minutes for enhanced flavors.
