Follow these steps to create your crispy zucchini fritters:
1. Prepare the Zucchini: Grate the zucchinis using a box grater. Place them in a clean dish towel and squeeze out excess moisture.
2. Mix Ingredients: In a bowl, combine the grated zucchini, salt, flour, Parmesan cheese, egg, green onions, garlic, black pepper, and paprika (if using). Stir until well mixed.
3. Heat Oil: In a large skillet, pour enough olive oil to cover the bottom and heat it over medium heat.
4. Form Fritters: Scoop about 2 tablespoons of the mixture and shape it into a patty. Repeat for the remaining mixture.
