Description

Crispy smashed potatoes are the ultimate side dish! Soft and fluffy on the inside, golden and crunchy on the outside, they are packed with flavor and easy to make.


Ingredients

  • 1 ½ lbs baby potatoes (Yukon Gold or red potatoes)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)
  • ¼ cup grated Parmesan (optional)

Instructions

  • Boil the potatoes in salted water for 15-20 minutes until fork-tender.
  • Drain and let them cool slightly.
  • Preheat the oven to 425°F (220°C) and line a baking sheet.
  • Place the potatoes on the sheet and gently smash them with a fork or glass.
  • Drizzle with olive oil, and sprinkle with garlic, salt, pepper, and thyme.
  • Roast for 25-30 minutes, flipping halfway until crispy and golden brown.
  • Sprinkle with Parmesan cheese if desired and serve warm.

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Use an air fryer at 400°F (200°C) for 12-15 minutes for a faster option.
