  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 eggs
  • ½ cup buttermilk (or milk + 1 tsp vinegar)
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 cups vegetable oil (for frying)

Instructions

  • In a bowl, whisk together eggs and buttermilk. Add chicken pieces and marinate for 15-30 minutes.
  • In another bowl, mix flour, cornstarch, and seasonings.
  • Remove chicken from marinade, letting excess drip off, and coat in the flour mixture.
  • Heat oil to 350°F (175°C) in a deep pan.
  • Fry chicken in batches for 3-4 minutes or until golden brown.
  • Drain on a wire rack and serve hot with dipping sauces.

Notes

  • For extra crispiness, double-coat the chicken by dipping it back into buttermilk and flour.
  • Can be baked or air-fried for a healthier option.
