These crispy baked zucchini rounds are the perfect guilt-free snack or side dish. Made with just a few ingredients, they’re crunchy, flavorful, and oven-baked to golden perfection.
Ingredients

2 medium zucchini, sliced into 1/8” rounds

1½ tbsp olive oil

⅓ cup panko breadcrumbs (or gluten-free breadcrumbs)

⅓ cup grated parmesan cheese (or more breadcrumbs for dairy-free)

¼ tsp salt

Optional: Greek yogurt ranch for dipping
Instructions

Preheat oven to 425°F (220°C). Place a wire rack on a baking sheet and coat with cooking spray.

Toss zucchini slices with olive oil in a medium bowl.

In a separate bowl, combine breadcrumbs, parmesan, and salt.

Dip each zucchini slice into the breadcrumb mixture, coating both sides.

Place on prepared wire rack in a single layer.

Bake for 15–20 minutes, until golden and crispy.

Serve warm with Greek yogurt ranch or your favorite dipping sauce.
