Description

These crispy baked zucchini rounds are the perfect guilt-free snack or side dish. Made with just a few ingredients, they’re crunchy, flavorful, and oven-baked to golden perfection.


Ingredients

  • 2 medium zucchini, sliced into 1/8” rounds

  • 1½ tbsp olive oil

  • ⅓ cup panko breadcrumbs (or gluten-free breadcrumbs)

  • ⅓ cup grated parmesan cheese (or more breadcrumbs for dairy-free)

  • ¼ tsp salt

  • Optional: Greek yogurt ranch for dipping


Instructions

  • Preheat oven to 425°F (220°C). Place a wire rack on a baking sheet and coat with cooking spray.

  • Toss zucchini slices with olive oil in a medium bowl.

  • In a separate bowl, combine breadcrumbs, parmesan, and salt.

  • Dip each zucchini slice into the breadcrumb mixture, coating both sides.

  • Place on prepared wire rack in a single layer.

  • Bake for 15–20 minutes, until golden and crispy.

  • Serve warm with Greek yogurt ranch or your favorite dipping sauce.

Notes

  • For extra crispiness, broil for 1–2 minutes at the end of baking.

  • Use gluten-free breadcrumbs and skip cheese for a gluten-free, dairy-free option.
