Instructions
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into an 8×8-inch lined pan. Bake at 325°F (163°C) for 10 minutes.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and heavy cream, mixing until combined.
- Bake: Pour filling over crust and bake for 40-45 minutes, or until the center is slightly jiggly. Cool gradually, then refrigerate for 3 hours.
- Caramelize the topping: Sprinkle sugar over the chilled cheesecake. Use a kitchen torch to brûlée the sugar until golden brown and crisp.
- Slice and serve: Cut into bars and enjoy immediately.
