  • ½ sweet yellow onion, finely chopped
  • 1½ teaspoons minced garlic
  • 1 can (14 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • ¾ cup heavy cream (or whole milk)
  • 8 ounces uncooked pasta (penne, macaroni, or shells)
  • 1 tablespoon olive oil
  • Freshly grated Parmesan cheese (for garnish)
  • Chopped parsley (for garnish)

Instructions

  • Cook the pasta in salted water until al dente, then drain, reserving ½ cup of pasta water.
  • In a large skillet, heat olive oil over medium-high heat. Add onions and sauté until soft. Stir in garlic and cook for 30 seconds.
  • Add ground beef and cook until browned. Drain excess fat if needed.
  • Stir in tomato paste, diced tomatoes, Dijon mustard, and Italian seasoning. Let simmer for 5 minutes.
  • Reduce heat and stir in heavy cream. Simmer for another 3 minutes.
  • Add the cooked pasta and mix well. If the sauce is too thick, add reserved pasta water gradually.
  • Season with salt and black pepper. Garnish with Parmesan and parsley. Serve hot.

Notes

  • For a lighter version, use ground turkey and swap heavy cream for Greek yogurt or low-fat milk.
  • Add red pepper flakes for a spicy kick.
  • Store leftovers in an airtight container for up to 3 days.
