Description

This creamy Parmesan spinach mushroom pasta is a quick and comforting dish loaded with rich, cheesy flavors. Perfect for a busy weeknight dinner!


Ingredients

  • 12 oz (340g) pasta (fettuccine, penne, or spaghetti)
  • 2 tbsp butter or olive oil
  • 4 cloves garlic, minced
  • 2 cups mushrooms, sliced (button or cremini)
  • 3 cups fresh spinach
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Parmesan cheese
  • Salt & black pepper, to taste
  • ½ tsp red pepper flakes (optional)
  • ½ cup reserved pasta water

Instructions

  • Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  • Heat butter or olive oil in a large pan over medium heat. Sauté mushrooms for 5 minutes until golden brown.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Stir in fresh spinach and cook until wilted (about 1-2 minutes).
  • Reduce heat and pour in heavy cream. Stir in Parmesan cheese until melted. Season with salt, black pepper, and red pepper flakes.
  • Toss in cooked pasta, adding reserved pasta water gradually to reach desired creaminess.
  • Serve warm with extra Parmesan and fresh black pepper on top.

  • Use fresh Parmesan for the best flavor and texture.
  • Add grilled chicken or shrimp for extra protein.
  • If the sauce thickens too much, add a splash of milk or more pasta water.
