This creamy Parmesan spinach mushroom pasta is a quick and comforting dish loaded with rich, cheesy flavors. Perfect for a busy weeknight dinner!

- 12 oz (340g) pasta (fettuccine, penne, or spaghetti)
- 2 tbsp butter or olive oil
- 4 cloves garlic, minced
- 2 cups mushrooms, sliced (button or cremini)
- 3 cups fresh spinach
- 1 cup heavy cream (or half-and-half)
- 1 cup grated Parmesan cheese
- Salt & black pepper, to taste
- ½ tsp red pepper flakes (optional)
- ½ cup reserved pasta water
Instructions
- Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
- Heat butter or olive oil in a large pan over medium heat. Sauté mushrooms for 5 minutes until golden brown.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in fresh spinach and cook until wilted (about 1-2 minutes).
- Reduce heat and pour in heavy cream. Stir in Parmesan cheese until melted. Season with salt, black pepper, and red pepper flakes.
- Toss in cooked pasta, adding reserved pasta water gradually to reach desired creaminess.
- Serve warm with extra Parmesan and fresh black pepper on top.

- Use fresh Parmesan for the best flavor and texture.
- Add grilled chicken or shrimp for extra protein.
- If the sauce thickens too much, add a splash of milk or more pasta water.
