Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 Tbsp olive oil

  • Salt and pepper, to taste

  • Fresh parsley, for garnish


Instructions

  • Season chicken breasts with salt and pepper.

  • Sear in olive oil over medium-high heat until golden, then set aside.

  • In the same pan, sauté onion until soft, then add garlic and cook until fragrant.

  • Add rice and toast for 2–3 minutes.

  • Stir in broth and cream, then return chicken to skillet.

  • Cover and simmer on low for 20–25 minutes, or until rice is tender and chicken is cooked through.

  • Stir in Parmesan cheese, let rest for 5 minutes.

  • Garnish with fresh parsley and serve.

Notes

  • Use freshly grated Parmesan for best results.

  • Add vegetables like spinach or peas for more color and nutrients.

  • For a lighter version, substitute heavy cream with half-and-half.
