Instructions
Creating Creamy Miso Mushroom Pasta is simple if you follow these steps:
1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set it aside.
2. Sauté the Onion and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
3. Add the Mushrooms: Stir in the sliced mushrooms and cook until they are tender and browned, about 5-7 minutes.
4. Make the Sauce: In a small bowl, mix the miso paste with a few tablespoons of the vegetable broth until smooth. Add this mixture to the skillet along with the remaining vegetable broth and soy sauce. Stir to combine and let simmer for 2-3 minutes.
5. Add Cream: Pour in the heavy cream (or coconut cream) and stir well. Let the sauce simmer for another 5 minutes, allowing it to thicken. If it becomes too thick, add some reserved pasta water to reach your desired consistency.
6. Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce. Season with salt and pepper to taste.
7. Serve Immediately: Once the pasta is well-coated and heated through, remove it from the heat and serve immediately.
