- Zest & juice of 1 lemon
- ½ cup grated parmesan cheese
- ¼ cup heavy cream (or half & half)
- 1 tbsp chopped fresh parsley (optional)
- Salt & black pepper, to taste
- Red pepper flakes (optional, for a little heat)
Instructions
- Cook the Ravioli: Boil ravioli in salted water according to package instructions. Reserve ½ cup of pasta water, then drain.
- Prepare the Sauce: In a pan over medium heat, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Add Lemon & Seasonings: Stir in lemon zest, juice, and red pepper flakes (if using).
- Incorporate Cream & Cheese: Lower heat, add heavy cream and parmesan, stirring until smooth. If the sauce is too thick, add reserved pasta water.
- Toss the Ravioli: Add the ravioli to the sauce, gently toss to coat, and season with salt & pepper to taste.
- Garnish & Serve: Sprinkle with extra parmesan, parsley, and a squeeze of lemon before serving. Enjoy immediately!
