Description

This one-skillet creamy garlic mushroom chicken is rich, flavorful, and ready in under 45 minutes. A comforting, crowd-pleasing weeknight dinner!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 medium yellow onion, finely chopped

  • 34 garlic cloves, minced

  • 2 cups cremini or button mushrooms, sliced

  • 1 tsp dried thyme

  • ½ tsp dried rosemary

  • 1 cup chicken broth (low sodium)

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Optional: ¼ cup grated Parmesan

  • Optional: Fresh parsley for garnish


Instructions

  • Pat chicken dry and season with salt and pepper.

  • Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken 5–6 mins per side. Remove and set aside.

  • Sauté onion until soft. Add garlic and cook 1 minute.

  • Add mushrooms and cook until browned, about 6–8 mins. Stir in herbs.

  • Deglaze pan with broth, then add cream. Simmer until thickened.

  • Return chicken to skillet and simmer until cooked through, 10–12 mins.

  • Garnish with parsley. Serve hot.

Notes

  • For extra flavor, use freshly grated Parmesan.

  • Chicken thighs may be substituted.

  • Add red pepper flakes for a spicy kick.

  • Store in fridge up to 4 days.
