Description
This one-skillet creamy garlic mushroom chicken is rich, flavorful, and ready in under 45 minutes. A comforting, crowd-pleasing weeknight dinner!
Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

1 tbsp butter

1 medium yellow onion, finely chopped

3–4 garlic cloves, minced

2 cups cremini or button mushrooms, sliced

1 tsp dried thyme
-
½ tsp dried rosemary

1 cup chicken broth (low sodium)

1 cup heavy cream
-
Salt and pepper to taste

Optional: ¼ cup grated Parmesan

Optional: Fresh parsley for garnish
Instructions

Pat chicken dry and season with salt and pepper.

Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken 5–6 mins per side. Remove and set aside.

Sauté onion until soft. Add garlic and cook 1 minute.

Add mushrooms and cook until browned, about 6–8 mins. Stir in herbs.

Deglaze pan with broth, then add cream. Simmer until thickened.

Return chicken to skillet and simmer until cooked through, 10–12 mins.

Garnish with parsley. Serve hot.
Notes

For extra flavor, use freshly grated Parmesan.

Chicken thighs may be substituted.
