Description

A creamy, crunchy, flavor-packed corn salad made with sweet corn, red bell pepper, Mexican cheese blend, and bold Chili Cheese Fritos. Perfect for parties, potlucks, or a quick side dish any night of the week.


Ingredients

  • 2 (15 oz) cans whole kernel corn, drained

  • 1 red bell pepper, finely diced

  • 2 cups shredded Mexican blend cheese

  • 1 cup mayonnaise (or light mayo)

  • ¼ tsp black pepper

  • 1 (9.25 oz) bag Chili Cheese Fritos, lightly crushed

  • Fresh cilantro, for garnish (optional)


Instructions

  • Drain corn thoroughly and place in a large bowl.

  • Add diced red bell pepper, shredded cheese, mayonnaise, and black pepper.

  • Mix gently until fully combined.

  • Chill if desired (optional).

  • Stir in crushed Chili Cheese Fritos just before serving.

  • Garnish with chopped cilantro if using. Serve immediately.

Notes

  • Add Fritos just before serving to keep them crunchy.

  • Substitute Greek yogurt for mayo for a lighter option.
