- 1 lb shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 tbsp red curry paste
- 1 tsp turmeric
- ½ tsp paprika
- 1 tsp garam masala
- 1 tbsp soy sauce or fish sauce
- 1 tbsp honey or brown sugar
- Salt and black pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat and sauté shrimp until pink. Remove and set aside.
- In the same pan, sauté onions, garlic, and ginger until fragrant.
- Stir in red curry paste, turmeric, paprika, and garam masala, cooking for one minute.
- Pour in coconut milk, soy sauce, and honey, stirring to combine. Let simmer for 5-7 minutes.
- Add shrimp back into the pan and simmer for 2 more minutes.
- Finish with lime juice and garnish with fresh cilantro. Serve hot.

- For extra flavor, add bell peppers or spinach.
