This creamy coconut curry shrimp is a quick and flavorful seafood dish made with tender shrimp, coconut milk, red curry paste, and aromatic spices. Perfect for a weeknight dinner, this dish is rich, satisfying, and takes only 30 minutes to prepare.

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp turmeric
  • ½ tsp paprika
  • 1 tsp garam masala
  • 1 tbsp soy sauce or fish sauce
  • 1 tbsp honey or brown sugar
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  • Heat olive oil in a pan over medium heat and sauté shrimp until pink. Remove and set aside.
  • In the same pan, sauté onions, garlic, and ginger until fragrant.
  • Stir in red curry paste, turmeric, paprika, and garam masala, cooking for one minute.
  • Pour in coconut milk, soy sauce, and honey, stirring to combine. Let simmer for 5-7 minutes.
  • Add shrimp back into the pan and simmer for 2 more minutes.
  • Finish with lime juice and garnish with fresh cilantro. Serve hot.

  • For extra flavor, add bell peppers or spinach.
  • Adjust spice levels by adding chili flakes.
  • Serve with rice, naan, or noodles.
