  • 2 large chicken breasts, boneless and skinless

  • 2 tablespoons Cajun seasoning

  • 2 tablespoons olive oil

  • 12 oz pasta (linguine, fettuccine, or penne)

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1½ cups heavy cream

  • ¾ cup Parmesan cheese, freshly grated

  • Salt and pepper to taste

  • ¼ cup reserved pasta water (as needed)

  • Optional: 1 cup spinach or kale, parsley for garnish, extra Parmesan


Instructions

  • Cook pasta until al dente. Reserve ½ cup pasta water, drain, and set aside.

  • Season chicken breasts with Cajun spice.

  • Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until cooked through. Let rest, then slice.

  • In the same skillet, melt butter. Add garlic and sauté for 30 seconds.

  • Add tomatoes and cook until softened.

  • Stir in cream and ½ tsp Cajun seasoning. Simmer for 3–4 minutes.

  • Add Parmesan, stir until smooth and melted.

  • Return chicken and pasta to skillet. Toss to coat. Add pasta water to loosen sauce as needed.

  • Optional: Stir in spinach until wilted.

  • Garnish with parsley and extra Parmesan before serving.

Notes

  • Use freshly grated Parmesan for best melting results.

  • Adjust Cajun seasoning based on your heat preference.

  • Add veggies like mushrooms or bell peppers for extra nutrition.
