Ingredients

2 large chicken breasts, boneless and skinless

2 tablespoons Cajun seasoning

2 tablespoons olive oil

12 oz pasta (linguine, fettuccine, or penne)

2 tablespoons butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1½ cups heavy cream

¾ cup Parmesan cheese, freshly grated

Salt and pepper to taste

¼ cup reserved pasta water (as needed)

Optional: 1 cup spinach or kale, parsley for garnish, extra Parmesan
Instructions

Cook pasta until al dente. Reserve ½ cup pasta water, drain, and set aside.

Season chicken breasts with Cajun spice.

Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until cooked through. Let rest, then slice.

In the same skillet, melt butter. Add garlic and sauté for 30 seconds.

Add tomatoes and cook until softened.

Stir in cream and ½ tsp Cajun seasoning. Simmer for 3–4 minutes.

Add Parmesan, stir until smooth and melted.

Return chicken and pasta to skillet. Toss to coat. Add pasta water to loosen sauce as needed.

Optional: Stir in spinach until wilted.

Garnish with parsley and extra Parmesan before serving.
