Description
A fresh, creamy, and protein-packed pasta salad made with rotisserie chicken, crunchy veggies, tangy Caesar dressing, and crispy croutons. Perfect for meal prep, potlucks, or an easy family dinner.
Ingredients

8 oz uncooked penne pasta

¾ cup creamy Caesar dressing

1 tsp grated lemon zest + 2 Tbsp lemon juice

½ tsp black pepper

¼ tsp kosher salt

2 cups shredded rotisserie chicken

1 pint cherry tomatoes, halved

¾ cup thinly sliced red onion

2 oz shredded Parmesan cheese (about ½ cup)

2 cups chopped romaine lettuce

1 cup garlic-seasoned croutons
-
Chopped fresh parsley, for garnish
Instructions

Cook pasta in salted water until al dente. Drain and rinse under cold water.

In a large bowl, whisk Caesar dressing, lemon juice/zest, salt, and pepper.

Add cooled pasta, chicken, tomatoes, onion, and Parmesan to the bowl. Stir to combine.

Chill for 30–60 minutes.

Just before serving, fold in romaine and croutons.

Garnish with more Parmesan and parsley. Serve cold or room temperature.
Notes

Add the lettuce and croutons just before serving to prevent sogginess.

For a vegetarian version, omit the chicken and add chickpeas or grilled tofu.

Store leftovers for up to 3 days (keep lettuce/croutons separate).
