Caesar Chicken Pasta Salad – Easy, and Meal Prep Friendly

Description

A fresh, creamy, and protein-packed pasta salad made with rotisserie chicken, crunchy veggies, tangy Caesar dressing, and crispy croutons. Perfect for meal prep, potlucks, or an easy family dinner.


Ingredients

  • 8 oz uncooked penne pasta

  • ¾ cup creamy Caesar dressing

  • 1 tsp grated lemon zest + 2 Tbsp lemon juice

  • ½ tsp black pepper

  • ¼ tsp kosher salt

  • 2 cups shredded rotisserie chicken

  • 1 pint cherry tomatoes, halved

  • ¾ cup thinly sliced red onion

  • 2 oz shredded Parmesan cheese (about ½ cup)

  • 2 cups chopped romaine lettuce

  • 1 cup garlic-seasoned croutons

  • Chopped fresh parsley, for garnish


Instructions

  • Cook pasta in salted water until al dente. Drain and rinse under cold water.

  • In a large bowl, whisk Caesar dressing, lemon juice/zest, salt, and pepper.

  • Add cooled pasta, chicken, tomatoes, onion, and Parmesan to the bowl. Stir to combine.

  • Chill for 30–60 minutes.

  • Just before serving, fold in romaine and croutons.

  • Garnish with more Parmesan and parsley. Serve cold or room temperature.

Notes

  • Add the lettuce and croutons just before serving to prevent sogginess.

  • For a vegetarian version, omit the chicken and add chickpeas or grilled tofu.

  • Store leftovers for up to 3 days (keep lettuce/croutons separate).
