These Cranberry Crumble Bars are a delightful combination of buttery crust, sweet-tart cranberry filling, and a delicious crumble topping. Perfect for a cozy dessert, snack, or breakfast treat!

Crust & Crumble:
- 1 cup Unsalted butter, melted
- 1 cup Granulated sugar
- 1 tsp Vanilla extract
- 1/2 tsp Baking powder
- 1/4 tsp Salt
- 2 1/2 cups All-purpose flour
Cranberry Filling:
- 2 1/2 cups Fresh or frozen cranberries
- 2/3 cup Granulated sugar
- 2 tbsp Cornstarch
- 1 tbsp Lemon juice

Prepare the Baking Dish:
- Preheat oven to 350°F (175°C).
- Grease a 9×13-inch baking dish and line with parchment paper.

Make the Crust & Crumble:
- In a large bowl, mix melted butter, sugar, vanilla extract, baking powder, salt, and flour until crumbly.
- Reserve 1/3 of the dough for the topping and press the remaining 2/3 into the baking dish.

Prepare Cranberry Filling:
- In a bowl, combine cranberries, sugar, cornstarch, and lemon juice. Mix until evenly coated.

Assemble & Bake:
- Spread the cranberry mixture over the crust.
- Sprinkle the reserved crumble dough on top.
- Bake for 40–45 minutes or until the top is golden brown and cranberries are bubbling.

Cool & Slice:
- Allow the bars to cool completely before slicing. Enjoy!
Notes
- For gluten-free bars, replace all-purpose flour with a gluten-free flour blend.
- To enhance flavor, add 1/2 tsp cinnamon to the crumble mixture.
- Store in an airtight container at room temperature for 3 days or in the fridge for up to 1 week.
