Description

  • 1 stick (½ cup) butter, melted

  • 16 oz cottage cheese

  • 16 oz shredded Monterey Jack cheese

  • 16 oz frozen hash browns, thawed

  • 1 tsp baking powder

  • ¼ cup all-purpose flour

  • Salt and pepper, to taste


Instructions

  • Preheat oven to 350°F (175°C).

  • Grease a 9×13-inch baking dish.

  • In a large bowl, whisk eggs thoroughly.

  • Add melted butter, cottage cheese, shredded Monterey Jack, hash browns, flour, and baking powder.

  • Season with salt and pepper. Stir to combine.

  • Pour into prepared baking dish and spread evenly.

  • Bake for 50–60 minutes, until golden and set.

  • Let rest for 10–15 minutes before slicing and serving.
