Instructions

Preheat oven to 350°F (175°C).

Grease a 9×13-inch baking dish.

In a large bowl, whisk eggs thoroughly.

Add melted butter, cottage cheese, shredded Monterey Jack, hash browns, flour, and baking powder.

Season with salt and pepper. Stir to combine.
