Description

This homemade Starbucks lemon loaf is moist, fluffy, and full of fresh citrus flavor. Topped with a sweet lemon glaze, it’s the perfect treat for breakfast, dessert, or an afternoon snack.

  • For the Lemon Loaf:
    • 3 cups all-purpose flour
    • 1 teaspoon kosher salt
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 5 large eggs
    • Zest of 5 lemons (juice reserved)
    • 2 cups vanilla Greek yogurt
    • 1 teaspoon vanilla extract
  • For the Simple Syrup:
    • ½ cup granulated sugar
    • ½ cup fresh lemon juice
  • For the Lemon Glaze:
    • 3 cups powdered sugar
    • ¼ cup fresh lemon juice
    • 24 tablespoons heavy cream

Instructions

  • Preheat oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  • Whisk together flour, salt, baking powder, and baking soda in a bowl.
  • In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time.
  • Stir in lemon zest, ¼ cup lemon juice, and vanilla extract.
  • Alternately mix in flour mixture and Greek yogurt. Do not overmix.
  • Divide batter evenly into prepared loaf pans.
  • Bake for 40 minutes, cover with foil, then bake another 20-30 minutes.
  • Prepare the simple syrup by heating sugar and lemon juice until dissolved.
  • Poke holes in warm loaves and pour syrup over them. Let cool completely.
  • Prepare the glaze by mixing powdered sugar, lemon juice, and heavy cream.
  • Pour glaze over cooled loaves and let it set before slicing.

  • Use fresh lemon juice for the best flavor.
  • Store at room temperature for 5 days or freeze for up to 3 months.
  • Can be made gluten-free by using 1:1 gluten-free flour.
