- 6 large eggs
- 3–4 cups water (for boiling)
- 1 tbsp white vinegar
- Food coloring (various colors)
- ¼ cup mayonnaise
- 1 tsp mustard (yellow or Dijon)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika (for garnish)
Instructions
- Place eggs in a pot of cold water, bring to a boil, turn off the heat, cover, and let sit for 10 minutes.
- Transfer the eggs to an ice bath for 5 minutes, then peel them.
- Slice the eggs in half lengthwise and remove the yolks.
- In separate bowls, mix water, vinegar, and a few drops of food coloring. Soak the egg whites for 5-10 minutes, then place them on a paper towel to dry.
- Mash the egg yolks with mayonnaise, mustard, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the colored egg whites.
- Sprinkle with paprika for garnish and serve chilled.
Notes
- For brighter colors, use gel food coloring.
- Let the eggs sit in the refrigerator for at least an hour before serving for the best flavor.
- Try adding hot sauce or pickle relish for a flavor twist.
