Ingredients

  • 6 large eggs
  • 34 cups water (for boiling)
  • 1 tbsp white vinegar
  • Food coloring (various colors)
  • ¼ cup mayonnaise
  • 1 tsp mustard (yellow or Dijon)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika (for garnish)

Instructions

  • Place eggs in a pot of cold water, bring to a boil, turn off the heat, cover, and let sit for 10 minutes.
  • Transfer the eggs to an ice bath for 5 minutes, then peel them.
  • Slice the eggs in half lengthwise and remove the yolks.
  • In separate bowls, mix water, vinegar, and a few drops of food coloring. Soak the egg whites for 5-10 minutes, then place them on a paper towel to dry.
  • Mash the egg yolks with mayonnaise, mustard, salt, and pepper until smooth.
  • Spoon or pipe the yolk mixture back into the colored egg whites.
  • Sprinkle with paprika for garnish and serve chilled.

Notes

  • For brighter colors, use gel food coloring.
  • Let the eggs sit in the refrigerator for at least an hour before serving for the best flavor.
