Ingredients

  • 1 (28 oz) can whole plum tomatoes (including juice)

  • 1 small onion (brown, white, or red – roughly chopped)

  • 3 cloves garlic

  • 1 teaspoon ground cumin

  • ½ teaspoon ground coriander

  • 1½ teaspoons salt

  • 2 teaspoons granulated sugar

  • 3 tablespoons lime juice

  • 1 cup cilantro (tightly packed)


Instructions

  • Add the canned tomatoes (with juice) to a blender or food processor.

  • Add onion, garlic, cumin, coriander, salt, sugar, and lime juice.

  • Add the cilantro last.

  • Pulse or blend until desired consistency is reached.

  • Taste and adjust seasonings if needed.

  • Chill in an airtight container for at least 3 hours before serving.

Notes

  • For spicier salsa, add jalapeño or chipotle pepper.

  • Use fresh lime juice for the brightest flavor.

  • Salsa improves in flavor the longer it sits (up to 24 hours).
