Ingredients

1 (28 oz) can whole plum tomatoes (including juice)

1 small onion (brown, white, or red – roughly chopped)

3 cloves garlic

1 teaspoon ground cumin

½ teaspoon ground coriander

1½ teaspoons salt

2 teaspoons granulated sugar

3 tablespoons lime juice

1 cup cilantro (tightly packed)
Instructions

Add the canned tomatoes (with juice) to a blender or food processor.

Add onion, garlic, cumin, coriander, salt, sugar, and lime juice.

Add the cilantro last.

Pulse or blend until desired consistency is reached.

Taste and adjust seasonings if needed.

Chill in an airtight container for at least 3 hours before serving.
