These no-bake chocolate pecan bites are chewy, nutty, and dipped in smooth melted chocolate for a perfect quick dessert or holiday treat.
Ingredients

2 cups finely chopped pecans

1 cup graham cracker crumbs

1 cup brown sugar, packed

½ cup corn syrup (light or dark)

¼ tsp salt

1 tsp vanilla extract

1½ cups chopped pecans (for texture)

10 oz chocolate melting wafers or chocolate chips (for coating)

Optional: Sea salt for sprinkling
Instructions

In a large bowl, mix finely chopped pecans, graham cracker crumbs, brown sugar, corn syrup, salt, and vanilla until combined.

Fold in 1½ cups chopped pecans.

Roll into 1-inch balls and place on a parchment-lined tray.

Chill in fridge or freezer for at least 1 hour.

Melt chocolate in 30-second intervals until smooth.

Dip each ball in chocolate using a fork, let excess drip off.

Place back on parchment, sprinkle with sea salt (optional).

Let chocolate set at room temperature or in fridge.
