Description

These no-bake chocolate pecan bites are chewy, nutty, and dipped in smooth melted chocolate for a perfect quick dessert or holiday treat.


Ingredients

  • 2 cups finely chopped pecans

  • 1 cup graham cracker crumbs

  • 1 cup brown sugar, packed

  • ½ cup corn syrup (light or dark)

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • 1½ cups chopped pecans (for texture)

  • 10 oz chocolate melting wafers or chocolate chips (for coating)

  • Optional: Sea salt for sprinkling


Instructions

  • In a large bowl, mix finely chopped pecans, graham cracker crumbs, brown sugar, corn syrup, salt, and vanilla until combined.

  • Fold in 1½ cups chopped pecans.

  • Roll into 1-inch balls and place on a parchment-lined tray.

  • Chill in fridge or freezer for at least 1 hour.

  • Melt chocolate in 30-second intervals until smooth.

  • Dip each ball in chocolate using a fork, let excess drip off.

  • Place back on parchment, sprinkle with sea salt (optional).

  • Let chocolate set at room temperature or in fridge.

Notes

  • Toast pecans beforehand for deeper flavor.

  • Use a cookie scoop for even sizing.

  • Store in the fridge up to 2 weeks or freeze up to 3 months.
