Description

These Chili Lime Chickpea Cauliflower Wraps are a flavorful, plant-based meal featuring roasted chickpeas and cauliflower tossed in a smoky chili-lime seasoning. Wrapped in soft tortillas with fresh veggies and a creamy avocado dressing, this dish is perfect for a quick, healthy, and satisfying meal.

For the Filling:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups cauliflower florets, chopped small
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • Salt & pepper to taste

For the Creamy Dressing:

  • ½ avocado
  • ¼ cup unsweetened yogurt (dairy-free or regular)
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • Salt to taste
  • Water to thin, as needed

For Assembling:

  • 4 large tortillas
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup sliced red onion
  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss chickpeas and cauliflower with olive oil, chili powder, cumin, lime zest, lime juice, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes, flipping halfway.
  • Make the dressing by blending avocado, yogurt, lime juice, garlic powder, and salt until smooth. Add water as needed to reach desired consistency.
  • Warm the tortillas in a pan or microwave.
  • Assemble the wraps by layering lettuce, tomatoes, onions, and roasted chickpea-cauliflower filling. Drizzle with the creamy dressing and garnish with cilantro.
  • Wrap & enjoy!

  • For extra crunch, add shredded cabbage or tortilla chips.
