For the Filling:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups cauliflower florets, chopped small
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- 1 tsp lime zest
- 1 tbsp lime juice
- Salt & pepper to taste
For the Creamy Dressing:
- ½ avocado
- ¼ cup unsweetened yogurt (dairy-free or regular)
- 1 tbsp lime juice
- ½ tsp garlic powder
- Salt to taste
- Water to thin, as needed
For Assembling:
- 4 large tortillas
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ¼ cup sliced red onion
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas and cauliflower with olive oil, chili powder, cumin, lime zest, lime juice, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes, flipping halfway.
- Make the dressing by blending avocado, yogurt, lime juice, garlic powder, and salt until smooth. Add water as needed to reach desired consistency.
- Warm the tortillas in a pan or microwave.
- Assemble the wraps by layering lettuce, tomatoes, onions, and roasted chickpea-cauliflower filling. Drizzle with the creamy dressing and garnish with cilantro.
