Description

This one-skillet chicken pineapple rice is a quick, flavorful meal that balances sweet caramelized pineapple with savory chicken, jasmine rice, and bold aromatics.


Ingredients

  • 1 lb chicken breast, cubed

  • 1 cup pineapple, cubed

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 cup jasmine rice

  • 2 cups chicken broth

  • 1 tbsp soy sauce

  • 1 tsp grated ginger

  • Salt and pepper, to taste

  • ¼ cup green onions, sliced (for garnish)

  • 1 tbsp sesame seeds (for garnish)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through. Remove and set aside.

  • In the same skillet, sauté onion, garlic, and bell pepper until softened (about 3–4 minutes).

  • Add pineapple and cook for 2 minutes until caramelized.

  • Stir in rice, broth, soy sauce, ginger, salt, and pepper. Bring to a boil.

  • Reduce heat, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.

  • Return chicken to skillet and stir to combine. Heat through.

  • Garnish with green onions and sesame seeds before serving.

Notes

  • Use fresh pineapple for better caramelization.

  • Rinse rice before cooking for fluffier texture.

  • For a spicier version, add red pepper flakes.
