This one-skillet chicken pineapple rice is a quick, flavorful meal that balances sweet caramelized pineapple with savory chicken, jasmine rice, and bold aromatics.
Ingredients

1 lb chicken breast, cubed

1 cup pineapple, cubed

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup jasmine rice

2 cups chicken broth

1 tbsp soy sauce

1 tsp grated ginger

Salt and pepper, to taste

¼ cup green onions, sliced (for garnish)

1 tbsp sesame seeds (for garnish)
Instructions

Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through. Remove and set aside.

In the same skillet, sauté onion, garlic, and bell pepper until softened (about 3–4 minutes).

Add pineapple and cook for 2 minutes until caramelized.

Stir in rice, broth, soy sauce, ginger, salt, and pepper. Bring to a boil.

Reduce heat, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.

Return chicken to skillet and stir to combine. Heat through.
