- 2 cups shredded cooked chicken
- 1 lb potato gnocchi
- 2 cups fresh spinach, chopped
- 1 cup carrots, shredded
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream (or half-and-half)
- 2 tbsp butter
- 1 tsp Italian seasoning
- Salt & pepper to taste
- ½ cup grated Parmesan cheese
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Melt butter in a large pot over medium heat. Sauté onions, carrots, and garlic until soft.
- Pour in chicken broth and add Italian seasoning, salt, and pepper. Bring to a simmer.
- Stir in shredded chicken and gnocchi. Cook for 4-5 minutes until gnocchi floats.
- Reduce heat and stir in heavy cream and spinach. Simmer until spinach wilts.
- For a thicker soup, mix cornstarch with water and add to the pot. Stir in Parmesan cheese.
- Taste, adjust seasoning, and serve hot with extra cheese or breadsticks.
