Description

This Chicken Gnocchi Soup is a creamy, hearty, and comforting dish filled with tender chicken, soft potato gnocchi, fresh spinach, and a rich, flavorful broth. Inspired by Olive Garden, this homemade version is even better and perfect for a cozy meal.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 lb potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup carrots, shredded
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream (or half-and-half)
  • 2 tbsp butter
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • ½ cup grated Parmesan cheese
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  • Melt butter in a large pot over medium heat. Sauté onions, carrots, and garlic until soft.
  • Pour in chicken broth and add Italian seasoning, salt, and pepper. Bring to a simmer.
  • Stir in shredded chicken and gnocchi. Cook for 4-5 minutes until gnocchi floats.
  • Reduce heat and stir in heavy cream and spinach. Simmer until spinach wilts.
  • For a thicker soup, mix cornstarch with water and add to the pot. Stir in Parmesan cheese.
  • Taste, adjust seasoning, and serve hot with extra cheese or breadsticks.

  • Use rotisserie chicken for a quick shortcut.
  • Swap heavy cream for coconut milk for a dairy-free version.
  • Add red pepper flakes for a spicy kick.
