Ingredients

Scale

For the Salad:

  • 12 oz pasta (rotini, penne, or your favorite)

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)

  • 2 cups chopped Romaine lettuce (or baby spinach)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup shredded Parmesan cheese

  • 1/2 cup croutons

  • Fresh parsley for garnish (optional)

For the Dressing:

  • 1/2 cup creamy Caesar dressing (store-bought or homemade)

  • 2 tbsp lemon juice

  • 1 clove garlic, minced (optional)

  • Salt and pepper, to taste

Instructions

  • Cook the Pasta:

    • Bring a large pot of salted water to a boil.

    • Add pasta and cook until al dente (8–10 minutes).

    • Drain and rinse under cold water to cool.

  • Prepare the Chicken:

    • Use cooked rotisserie chicken or cook chicken breasts/thighs until fully cooked and cooled.

    • Shred or cube the chicken.

  • Make the Dressing:

    • In a small bowl, whisk together Caesar dressing, lemon juice, garlic, salt, and pepper.

  • Assemble the Salad:

    • Combine pasta, chicken, lettuce, cherry tomatoes, Parmesan cheese, and croutons in a large bowl.

    • Pour dressing over the salad and toss until well-coated.

  • Serve & Enjoy:

    • Garnish with parsley if desired. Serve chilled.

Notes

  • For best results, add lettuce and croutons just before serving.

  • Store leftovers in an airtight container for up to 3 days.

  • Add extra dressing if the salad looks dry after refrigeration.
