Description
A creamy, flavorful Chicken Caesar Pasta Salad combining pasta, tender chicken, crisp lettuce, cherry tomatoes, and crunchy croutons, tossed in a delicious Caesar dressing.
Ingredients
For the Salad:

12 oz pasta (rotini, penne, or your favorite)

2 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)

2 cups chopped Romaine lettuce (or baby spinach)

1 cup cherry tomatoes, halved

1/2 cup shredded Parmesan cheese

1/2 cup croutons

Fresh parsley for garnish (optional)
For the Dressing:

1/2 cup creamy Caesar dressing (store-bought or homemade)

2 tbsp lemon juice
-
1 clove garlic, minced (optional)

Salt and pepper, to taste
Instructions

Cook the Pasta:

Bring a large pot of salted water to a boil.

Add pasta and cook until al dente (8–10 minutes).

Drain and rinse under cold water to cool.

Prepare the Chicken:

Use cooked rotisserie chicken or cook chicken breasts/thighs until fully cooked and cooled.

Shred or cube the chicken.

Make the Dressing:

In a small bowl, whisk together Caesar dressing, lemon juice, garlic, salt, and pepper.

Assemble the Salad:

Combine pasta, chicken, lettuce, cherry tomatoes, Parmesan cheese, and croutons in a large bowl.

Pour dressing over the salad and toss until well-coated.

Garnish with parsley if desired. Serve chilled.

For best results, add lettuce and croutons just before serving.

Store leftovers in an airtight container for up to 3 days.
