Ingredients
For the Dressing & Marinade:

For the Salad:

1 lb boneless, skinless chicken thighs

1 tbsp canola oil

4 slices bacon, diced

1 head romaine, roughly chopped

1 1/2 cups quartered strawberries

1 avocado, sliced

1 cup corn kernels (canned or roasted)
Instructions

Prepare the Dressing & Marinade:

Whisk together Dijon mustard, green onions, olive oil, honey, vinegar, salt, and pepper.

Reserve 1/3 of the mixture as dressing and use the remaining 2/3 as marinade.

Marinate the Chicken:

Place chicken thighs in a bag or bowl with marinade.

Refrigerate for 2-6 hours.

Cook the Chicken & Bacon:

Preheat grill to medium heat.

Brush chicken with canola oil, season with salt and pepper, and grill for about 10 minutes, turning occasionally until cooked through (165°F internal temperature).
