Description

For the Dressing & Marinade:

  • 1/3 cup whole grain Dijon mustard

  • 2 green onions, thinly sliced

  • 3 tbsp extra virgin olive oil

  • 1 1/2 tbsp honey

  • 1 tbsp white balsamic vinegar

  • Kosher salt and freshly ground black pepper, to taste

For the Salad:

  • 1 lb boneless, skinless chicken thighs

  • 1 tbsp canola oil

  • 4 slices bacon, diced

  • 1 head romaine, roughly chopped

  • 1 1/2 cups quartered strawberries

  • 1 avocado, sliced

  • 1 cup corn kernels (canned or roasted)


Instructions

  • Prepare the Dressing & Marinade:

    • Whisk together Dijon mustard, green onions, olive oil, honey, vinegar, salt, and pepper.

    • Reserve 1/3 of the mixture as dressing and use the remaining 2/3 as marinade.

  • Marinate the Chicken:

    • Place chicken thighs in a bag or bowl with marinade.

    • Refrigerate for 2-6 hours.

  • Cook the Chicken & Bacon:

    • Preheat grill to medium heat.

    • Brush chicken with canola oil, season with salt and pepper, and grill for about 10 minutes, turning occasionally until cooked through (165°F internal temperature).

    • Cook bacon in a skillet until crispy. Drain on paper towels.

  • Assemble the Salad:

    • Combine romaine, sliced chicken, bacon, strawberries, avocado, and corn in a large bowl.

    • Drizzle with the reserved dressing and toss gently.

  • Serve Immediately:

    • Enjoy your fresh and flavorful salad!
