- 1 lb ground beef (or substitute with ground chicken or turkey)
- 1 small onion, diced
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken if preferred)
- 1/2 cup milk
- 1 cup frozen mixed vegetables (peas, carrots, corn, etc.) – optional but recommended!
- 1 1/2 cups shredded cheddar cheese (divided)
- Salt and pepper, to taste
- 1 package (32 oz) frozen tater tots
- Chopped parsley (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and diced onion until beef is browned and cooked through. Drain excess fat and season with salt and pepper.
- In a large bowl, combine the cooked beef, cream of mushroom soup, milk, mixed vegetables, and 1 cup of shredded cheddar cheese. Stir well and spread the mixture evenly in the prepared baking dish.
- Arrange the frozen tater tots in a single, even layer over the beef mixture.
- Bake uncovered for 40-45 minutes, until the tater tots are golden brown and crispy.
- Sprinkle the remaining 1/2 cup of cheese on top and bake for an additional 5 minutes, until melted and bubbly.
- Let the casserole cool slightly before serving. Garnish with fresh parsley if desired. Enjoy!
