3 tbsp all-purpose flour

2 cups 2% milk

1 cup shredded cheddar cheese

5 cups thinly sliced peeled potatoes (about 6 medium)

1/2 cup chopped onion

Instructions

Preheat Oven: Preheat oven to 350°F (175°C).

Make the Cheese Sauce: Melt butter in a large saucepan over low heat. Stir in flour, salt, and pepper until smooth. Gradually add milk, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat and stir in cheese until melted.

Combine & Assemble: Add sliced potatoes and onions to the cheese sauce and mix well. Transfer to a greased 2-quart baking dish.

Bake Covered: Cover and bake for 1 hour.

Bake Uncovered: Uncover and bake for an additional 30–40 minutes, until potatoes are tender and golden brown.

Serve: Let rest for 5–10 minutes before serving. Optionally, sprinkle additional pepper before serving.
