This cheesy hobo casserole is the perfect one-pan comfort food, made with savory ground beef, tender potatoes, and melty cheddar cheese. A budget-friendly, easy-to-make meal that’s great for busy weeknights or meal prep!

Ingredients

Scale
  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • ½ cup beef broth (or water)
  • ¼ cup milk (optional, for extra creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook the beef: In a skillet over medium heat, brown the ground beef. Add onions and garlic, cooking until soft. Season with salt, pepper, Italian seasoning, and paprika.
  • Layer the casserole: Spread beef mixture in the baking dish. Arrange potato slices on top, then season lightly.
  • Add cheese and moisture: Sprinkle cheddar and Parmesan cheese over the potatoes. Pour beef broth around the edges. Add milk for extra creaminess.
  • Bake covered for 30 minutes, then uncover and bake for another 15-20 minutes until the potatoes are tender and the cheese is golden.
  • Rest for 5 minutes, garnish with fresh parsley, and serve hot!

Notes

  • For a crispier topping, broil for the last 2 minutes.
  • Swap ground beef for turkey or chicken for a lighter version.
  • Add veggies like mushrooms or bell peppers for extra flavor.
